Noodles & Company is a restaurant chain that specializes in noodle dishes from various cuisines, including Italian, Asian, and American. The company was founded in 1995 by Aaron Kennedy in Denver, Colorado. Kennedy, who had previously worked for PepsiCo and the advertising agency J. Walter Thompson, saw a gap in the market for a fast-casual restaurant chain that offered a variety of noodle dishes. He opened the first Noodles & Company restaurant in the Cherry Creek neighborhood of Denver in 1995, and it quickly became popular.
